Recipe Card: Khachapuri (Home Cooking, Ep. 1)

Home Cooking highlights family recipes from international students. In this episode, home cook Nik walks you through all the necessary ingredients, preparation and cooking instructions to make Khachapuri.

Ingredients Required:

For the dough:

  • At least 2 cups of water
  • ¾ cup of warm milk
  • ¼ cup of warm water
  • 2 tsp of yeast
  • 1 tsp of salt
  • 1 tsp of sugar
  • 2 tbsp of vegetable oil

For the cheese:

  • Feta cheese
  • Mozzarella cheese
  • 1 egg
  • Butter 


Step 1: To prepare the dough, add milk, water, sugar, salt, oil, and yeast to a mixing bowl and stir.

Step 2: Slowly add flour while continuing to mix together until dough is formed. Usually 2 cups is enough, but add more if needed.

Step 3: Let the dough rise for an hour. 

Step 4: While the dough rises, make the cheese blend. Mix together mozzarella and feta cheese. Other cheese can be added as you deem necessary.

Step 5: Return to the dough. Coat a flat surface with flour and flatten out the dough. 

Step 6: It’s time to shape the dough so it looks like a boat. Add cheese in a parallel line along the length of one edge of the dough. Fold the dough over the cheese and repeat on the other side.

Step 7: Pack the two other edges with cheese and twist them into a sort of knot.

Step 8: The dough should now look like a boat, you are going to load the middle up with cheese.

Step 9: Once everything is ready, cook the khachapuri for 15 minutes at 480 degrees.

Step 10: After removing from the oven, put butter and crack and egg into the cheese. Stir it in while hot and enjoy!
