Tasty Tuesday: Summer Inspired Pasta Salad Recipe

Heading to a potluck? This simple pasta recipe with a light citrus taste is bound to be a hit with your friends and family at any BBQ or potluck.

What You Need:

  • Three handfuls of brussel sprouts

  • Small carton of cherry tomatoes

  • One bag of tortellini pasta or bowtie pasta

  • Four tablespoons of olive oil

  • One tablespoon of balsamic vinegar

  • One lemon (or less if you like it less citrusy, half of a lemon is recommended)

  • A handful of sun-dried tomatoes for extra tartness

Optional: cubed salami

  • Parmesan cheese

  • Salt and pepper to taste

 

Instructions:

-Preheat oven to 400 degrees Fahrenheit.

-Mix together olive oil, balsamic vinegar, salt and pepper.

-Cut brussel sprouts in half and the cherry tomatoes into quarters, toss in oil mixture.

-Lay brussel/tomato mixture out in roasting pan and bake for 15 minutes.

-Cook pasta according to directions.

-Mix all together, adding sun-dried tomatoes and parmesan cheese.

-Drizzle olive oil and lemon juice on top.
