Saint Patrick’s Day in a Pinch

Saint Patrick’s day is this Saturday! Don’t fret, if you haven’t thought out your plans yet and need some ideas to throw your party together, here are some recipes to save the day. These are a few appetizers and drinks to make that will keep your guests in the Irish spirit!
Shamrock Punch
What even is punch? Who knows, but this punch will be gone before you even get a chance to try it yourself. If your party is for adults, add some Irish whiskey or gin to add a kick!

1 Carton of lime sherbert

2 Liter bottle of Ginger Ale

Irish Whiskey or Gin (Optional)
-
Place sherbet into large bowl
-
Top with Ginger ale (& alcohol)

Let melt slightly before serving.
Irish Jello Shots

These are super cute treats you can serve to your guests and they even look like the Irish flag! This recipe is for the non-alcoholic version, but you can add vodka to the green and orange Jello when preparing them if you would like.

Green Jello mix
-
Orange Jello mix
-
1 can of sweetened condensed milk
-
Whipped cream
-
Unflavored Gelatin
-
2 ounce shot glasses
-
Vodka (optional)
-
Prepare the green jello according to directions
-
Pour into shot glasses, filling them 1/3rd of the way
-
Chill for 30 Minutes
-
Prepare the condensed milk by mixing with 4 tablespoons of gelatin and 2 cups of hot water
-
Pour into shot glasses, filling up another 1/3rd
-
Chill for another 30 minutes
-
Prepare Orange Jello and pour into glasses
-
Chill overnight
-
Before serving, top with whipped cream.
Beer and Cheddar Cheese Dip

Dips are one of the best appetizers; they are easy to make and serve plenty. This dip is fun because you can customize the richness of the dip based on the beer you use. The darker the beer, the richer the flavor of the dip.

½ to ¾ cup of beer

1 packet ranch dip mix
-
2 cups shredded cheddar cheese
-
16 oz softened cream cheese
-
Green onions
-
Mix dip mix together, cheddar cheese and cream cheese.

Gradually stir in beer until desired consistency is achieved.

Top with green onions and additional cheddar cheese
-
Serve with pretzels or vegetables.
Pesto and Goat Cheese Baguettes
Here’s another tasty appetizer that is easy to make! Depending on how much time you have, you can either use store bought pesto or make your own.

Goat Cheese
-
French baguette
-
Basil pesto
-
Cut baguette diagonally into thin slices
-
Layer goat cheese, then pesto on top of slices
-
Serve!
