Recipe Card: Vegan Eel Bowl (Home Cooking, Ep. 8)

  • 1 fresh eggplant
  • Japanese eel sauce
  • Teriyaki sauce or low sodium soy sauce
  • Green onion
  • Garlic powder
  • Ginger powder
  • White pepper


Step 1: Peel the skin from the eggplant and chop it into fish-size filets.

Step 2: Steam eggplant filets in a steamer for 5 minutes or until half-cooked.

Step 3: Mix Japanese eel sauce, some teriyaki sauce or low sodium soy sauce, garlic powder, ginger powder and white pepper to make a brush-on sauce.

Step 4: Pan-sear the half-cooked eggplant filets with the sauce until fully cooked.

Step 5: Enjoy!
