Perfectly pumpkin chocolate chip cookie recipe

The leaves are turning, the air getting colder, rain is falling down… its fall! All the fall flavors are emerging in grocery stores and cafes: cinnamon, apple, maple, and of course, pumpkin. For all those out there who love pumpkin, we have a recipe for you! These cookies are delicious, soft, pumpkiny, and everything you could ask for in a fall cookie.

Ingredients:

  • 1 ½ cups brown sugar

  • ¾ cups butter, softened

  • 1 cup pumpkin puree

  • 1 tsp vanilla extract

  • 2 eggs

  • 1 ½ teaspoon cinnamon

  • ½ teaspoon ground cloves

  • ¼ teaspoon nutmeg

  • 2 cups quick oats

  • 1 cup flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon salt

  • 1 ½ cups chocolate chips

Instructions

  1. Soften your butter to room temperature.

  2. Preheat the oven to 350 degrees and assemble ingredients

  3. In a large bowl, cream the butter, and mix in sugar. Add eggs, then beat.

  4. Add pumpkin and vanilla extract to butter mixture.

  5. If desired, put oats in blender and blend to a flour.

  6. Mix flour, oats, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt in a separate bowl.

  7. Combine dry ingredients to wet ingredients, (I did this in increments to keep chunks to a minimum). Do not over-mix.

  8. Add chocolate chips.

  9. Line a baking sheet with parchment paper. Drop cookies a bit more than an inch in diameter in rows, keeping them 2 inches apart.

  10. Bake for 10-12 minutes and do not over-bake. Cookies may appear soft in center, but will set as they cool.
