Ingredients
- 1 egg
- Salt and pepper
- 1 slice pre-cooked bacon
- 1 slice cheddar cheese
- Bagel
Directions
- Crack egg in microwave safe bowl, scrabble with fork and add salt and pepper to taste
- Microwave in 15 second increments until cooked
- Microwave bacon according to package
- Stack egg, bacon, and cheese on bagel
- Microwave for 15 more seconds to melt cheese and warm bagel
- Enjoy!
Chicken caesar salad
Ingredients
- Caesar salad kit
- Rotisserie chicken
Directions
- Mix salad ingredients in bag
- Shred a portion of chicken (save the rest for other meals)
- Add chicken to salad
- Pour into a bowl and enjoy!
Chicken enchiladas
Use more of that rotisserie chicken
Ingredients
- Rotisserie chicken
- Medium enchilada sauce
- Shredded cheese
- Corn tortillas
- Toppings of your choice ex. Tomatoes, avocado, sour cream, beans etc.
Directions
- Shred a portion of chicken (about ½ of a cup)
- Mix chicken with ¼ cup of sauce and a sprinkle of cheese
- Fill tortillas with mixture
- Microwave for 2 minutes
- Sprinkle cheese and sauce on top
- Microwave for 1 more minute
- Add your favorite toppings and enjoy
Pesto pasta
Ingredients
- Pasta of your choice
- Pesto sauce (jar or packet)
- Water
Directions
- Measure ½-⅔ cups of your favorite pasta and pour into mug
- Fill with water until all pasta is covered
- Microwave in 1 minute increments until al dente (about 7-8 minutes)
- Drain water
- Add 1 tablespoon of sauce
- Mix and enjoy
Stir fry
Ingredients
- Rotisserie chicken
- Jasmine ready rice
- Frozen veggie blend (broccoli, carrots, cauliflower)
- Teriyaki sauce
Directions
- Steam vegetables according to package directions
- Cook rice according to package directions
- Shred about ½ cup of chicken

- Add 2 tablespoons of teriyaki sauce

- Crush 2 graham crackers

- Rotisserie chicken (I know I know more rotisserie chicken, but it’s quick, easy protein)
- Flour tortilla
- Shredded cheese
- Hot sauce
Directions
- Put cheese and shredded chicken on tortilla
- Microwave 1 minute
- Fold tortilla
- Microwave for 1 more minute or until cheese is melted
- Add hot sauce and enjoy
Yogurt bowl
Ingredients
- Plain greek yogurt
- Honey
- Granola
- Frozen strawberries
- Frozen blueberries
Directions
- Measure 1 cup of greek yogurt
- Drizzle honey on top
- Add ⅓ cup of granola, strawberries, and blueberries
