“We want it to be something people look forward to,” says mother-daughter duo Mary Jackson and Elizabeth Edwards, bakers and owners of The Little Bakehouse on Harrison.
The Little Bakehouse, started by the pair, has been operating since late May of 2025, and was inspired by their joint love of baking, and giving back to their community.
“It’s kind of a nice way to put a little love out into the world,” says Jackson.
The duo puts out items, Mondays, Wednesdays, and Fridays offering a variety of popular treats like, their chocolate chip cookies, citrus olive oil cake, and sugar cookie bars. They bake one batch of each item, which usually sells-out before the end of the day.
Located at 3356 NW Harrison Blvd in Corvallis, Oregon, on the outskirts of the Oregon State University campus, the bakehouse attracts both local and student traffic.
The duo says the bakehouse has been seeing a rise in student traffic especially in the last few weeks following the start of a new school year.
Dedicated to accessibility for everyone, Jackson and Edwards make their treats very affordable for college students, with most of their desserts being two or three dollars.
Edward says that the pair is not looking to make a profit but rather just cover the cost of the ingredients they are using.
Although neither of them are alumni, they have been on and off Corvallis residents for the last 30 years and are loyal beaver fans despite the rocky football season.
As for the future of The Little Bakehouse on Harrison, “We don’t want it to be a job,” they both agreed.
The bakehouse is a way for Jackson and Edwards to bring light to their community, pursue a passion project, and enjoy each other’s company.
They both emphasize the importance of passion and creativity when it comes to students looking to create small businesses of their own.
With every cookie, cake, or pie, the mother-daughter duo strives to not just bake desserts, but bake a community.
